Ciao, I’m Simone. Welcome to my world of cheese! Together with my parents, we run a dairy farm in the heart of the Pollino National Park, where the green mountains and fresh air accompany every stage of production. Here in our small laboratory, we transform sheep and goat milk into traditional, authentic cheeses made just as they once were — with care, patience, and a dedication that only a few still maintain.
After completing my studies, I decided to return to my hometown to dedicate myself to the business, helping my parents and continuing a tradition that fills me with pride. My favourite part?
